Salted Caramel & Peanut Snickers



Let’s be real, the only appropriate time to use the words gooey or moist is while describing desserts.


These gooey, sweet and crunchy Salted Caramel & Peanut Snickers bars are simple to make, easy to eat, free from added sugars, healthy, vegan, gluten free and downright delicious. If you like chocolate and peanut butter, you will love this!


RECIPE | Makes: minimum 12 small bars/squares

Base Ingredients:

  • ¼ cup desiccated coconut

  • ½ cup oats (*can sub gluten free oats)

  • ½ cup salted peanuts (*if using unsalted peanuts, add an additional ¼ tsp. of salt)

  • ½ cup medjool dates (soaked)

  • ½ tsp. vanilla extract

  • 1 tsp. cinnamon

  • ¼ cup water


Salted Peanut Caramel Ingredients:

  • 1 cup medjool dates (soaked)

  • ¼ cup natural unsalted peanut butter

  • ¼ tsp. salt

  • ¼ cup water


Dark Chocolate Ganache Ingredients:

  • 60g Dark Chocolate (in this recipe I have used the Lindt 85% dark)

  • 1/3 cup almond milk (warmed)


*If you prefer a crunchier top layer: rather than making a choc ganache sauce, just melt 100g plain dark chocolate and spread it over the top.


Please note that this recipe will require a high-speed blender or food processor.


Method:

  1. Start by carefully pitting each date. Once pitted soak the dates in boiling water for approximately 15-20 minutes (if you are using dried dates, soak them for at least an hour).

  2. Now it’s time to make your base, add all the base ingredients to your blender/food processer and pulse until a dough like consistency forms.

  3. Line a baking tray with parchment paper before pressing down the dough for the base layer. You may want to use a rolling pin to evenly flatten and shape the dough. Place in the freezer to set while you begin making your next layer.

  4. Add the ingredients for the salted peanut caramel into your food processor/blender. Blend until thick and smooth.

  5. Pour the salted peanut caramel over the base layer and evenly spread out with the use of a large flat spoon or spatula, place the bars back in the freezer to continue setting.

  6. To make the chocolate layer: i. you can either just melt straight dark chocolate in the microwave and pour it over the top of your bars or ii. you can make a healthier dark chocolate ganache.

  7. For the dark chocolate ganache simply mix together melted dark chocolate and warmed almond milk (if the mixture appears too thick, add a bit more almond milk until reaching a desired consistency).

  8. Top with additional roasted and salted peanuts and place in the freezer to set for approximately 1-1 ½ hours.

  9. Remove from the freezer, slice into bars and enjoy!

Store in an airtight container and place in the freezer, enjoy as a delicious sweet snack or dessert full of fibre, natural sweetness and nourishing goodness!
